Why Cauliflower is Special - 10 recipes

After potatoes, there is hardly any vegetable that has as many variations in cooking as cauliflower has.

Even it is hard to find haters of this winter vegetable; rather the number of people who wait for this vegetable all year round is high.

However, many find it boring due to a single recipe being overused. Here are 10 cauliflower recipes to increase variation and keep the taste bud healthy.

  1. Cauliflower Chop:

Cauliflower cut into medium-small size, lightly steamed, dipped in besan or egg batter, fried in oil and that’s it! This is called cauliflower chop. This simple fun dish is delicious to eat with rice, polao, khichuri; Just as great alone as a snack.

  1. Potato-Cauliflower Bhaji:

Potato-Cauliflower Bhaji can be made by chopping cauliflower with potatoes and frying it with a little oil and onion, chillies and salt until it is cooked. The presence of peas, beans and carrots makes it colourful and enhances its nutritional value.

  1. Fish-Cauliflower Jhol:

Can fish broth be separated from the existence of Bengalis? Adding seasonal vegetables to traditional Bengali fish curry is nothing new. As such, this combination of cauliflower and fish is both ancient and popular.

It is not a common combo like Fish and cauliflower but is delicious enough to take place in any cauliflower lover’s heart. In this curry cauliflower and potatoes are cooked in chicken sautéed with a tomato-spice based gravy.

Many biryani lovers feel offended when they hear the word ‘Veg-Biriyani’, “Is it really biryani when it is veg?!” Although cauliflower does not taste like meat, the veg polao cooked with fried cauliflower in a biryani-style is no less interesting.

  1. Sautéed Cauliflower with Melted Cheese:

Like the other 9 dishes, it is not from Bengali cuisine. But it is so easy to make and so delicious to eat that you can try it anytime at home. Just cut the cauliflower into small pieces, sauté with black paper powder and salt and when it is almost cooked, take it down. Spread mozzarella cheese on top and bake for 2-5 minutes. You can also add bell paper and baby corn to enhance the colour, taste and nutrition.
