Is there anyone who has been living in the bachelor mess or residential dorms but has not cried out for a new flavour of protein while eating eggs on a regular basis?
The answer is ‘No’ since egg has become somehow one of the staples for bachelors living without family.
Why always egg? First of all, it’s readily available. Whoever needs, can buy even in one or two pieces which is pocket friendly. Secondly, it can be stored at room temperature for a decent period of time.
The third reason is that it can be used in versatile cooking and no matter how it is served, the food is able to meet your daily protein needs.
Eating instant noodles? Add an egg. Want to have fried rice for a change? You’ll need eggs. Egg omelette with khichuri or egg curry with rice can meet the craving for traditional or Desi food.
Apart from this, there are more fun recipes with eggs that will give you a break from the boredom of commonly applied recipes.
Paneer Style Egg Curry
Ingredients:
- 4 eggs
- Salt
- Turmeric Powder
- Chopped onion and green chillies
- Minced Tomato
- Fried potato cubes
- Garam Masala powder
- Coriander powder
- Red chilli powder
- Oil
Recipe:
- Mix 4 eggs with two pinches of salt and two pinches of turmeric powder and beat well. The better the foam, the fluffier the egg pieces will be.
- In a non-stick frying pan, heat a little oil in low heat. When it is well heated, pour the beaten eggs and cover them with a lid. Once the bottom is well cooked, flip it over and cover it again. Once both sides are done, take it on a flat plate, cool it and cut it into small pieces like the pieces of paneer in paneer-curry.
- Heat two tablespoons oil on medium heat in a frying pan and fry 1 cup chopped onion until it turns lite brown. Add 1tsp chopped green chilli, 1 cup minced tomato, ½ tsp turmeric powder, ½ tsp red chilli powder, 1tsp coriander powder; stir well
- When the oil is released, leave the fried eggs and fried potato cubes with 3/4 cup water adding garam masala powder on the top.
- When the eggs almost absorb the water turn off the heat and serve with steamed rice.
(More spices like garlic-ginger paste, cumin paste, etc. can be added too for more flavour and texture.)
Egg-Potato Chips Cake
Ingredients:
- 1 pack of potato chips (50-60 gm, spicy or wasabi flavour more preferred)
- 3 eggs
- Minced tomato ¾ cup
- Chopped onion 2 tsp
- Chopped parsley 1tbsp
- Minced green chilli & garlic (each 1tsp)
- Turmeric powder 2 pinches
- Salt 3-4 pinches
- Oil 2 tsp
Recipe:
- Make a small hole on top of the packet, take out the air and scramble the chips with pressure.
- Mix all the rest ingredients together in a bowl except the eggs.
- Beat the eggs properly in another bowl, then pour in the 1st bowl's mixture, continue beating again.
- Cut the top-line of the packet of chips like a polybag and pour the mixture, tie the open portion tightly with a thread and shake well to make a nice dough.
- Boil the whole packet for 30 minutes in a pot full of water.
- Take out the packet and unpack the boiled cake. Serve smoky hot cutting into pieces.
Egg Scramble Gravy
It’s a recipe where you can add any kind of veggies, leftover veg curries, boiled and smashed soy-nuggets, pickle or chutney-- anything to make the gravy thicker and have the dish with roti, parathas, khichuri, rice, toasted bread, etc.
Ingredients:
- 3 eggs
- Chopped onion and green chillies
- Minced Tomato
- 1.5 cup smashed boiled soy-nuggets
- Salt
- Turmeric and red chilli powder
- Coriander powder
- Garam Masala powder
- Oil
Recipe:
- Mix 3 eggs with pinches of salt and turmeric powder and beat well.
- Heat a little oil in a non-stick frying pan in low heat. Pour the beaten eggs and keep stirring gently. When it becomes cooked and scrambled, add soy nuggets and keep stirring. Take that away from the pan when it is sautéed well.
- Heat two tablespoons oil on medium heat in a frying pan and fry 1 cup chopped onion until it turns lite brown. Add 1tsp chopped green chilli, 1 cup minced tomato, ½ tsp turmeric powder, ½ tsp red chilli powder, 1tsp coriander powder and stir well.
- When the oil is released, add the sautéed eggs and soy scramble. Stir and let the scramble absorb the spices.
- Add ½ cup water and Garam masala powder and cover for 3 minutes keeping in low flame.
- Turn off the heat and it is ready to serve.
